I'm having a lot of trouble with this guy. I've got the first phase down, but I die really fast when he transforms. I'm level 105, on NG. 40 Vit, 35 End, 40 Str, 15 Skill, using a +9 Holy Moonlight Sword with 3 18% gems on it. Am I just a scrub or should I level up?
Any Arcane? HMS scales well with that. Level 105 is more than enough though, you just need to git gud.
Also, why on Earth did you feel like you needed 35 END? You can get by without leveling that up at all in BB.

It's my first playthrough and I thought that I needed more, like in the Souls games. Also 15 Arcane.
I've been using the R2 thrust attack on the HMS which has been working out really well, but I don't know if it would be better to use something like Ludwig's or the Saw Spear instead.

HMS is better with quality stats. ARC only affects its special, bullet-consuming attacks in trick mode. You still get great damage from those attacks even with base ARC requirements for the weapon.

Unless you're NG+, you're way overleveled.
My advice would be to stay far away as possible unless you're up-close doing damage so you won't have to deal with it throwing those exploding balls.
