I only play Alien: Isolation if I use headphones. I'm not saying it's the best, but it's best experienced with headphones.
bad company 1 and 2 have supersexy sound design
mgs4's gun sounds and sound placement in the game world. It always felt accurate where enemies and npc's were in the game
red dead redemption - western cowboy shooty gun sounds have no match, and they pack a punch
last of us - there is a setting that makes guns feel really loud and fucked up, approaching the level of how you'd actually hear them if they were fired near you, or at you
Metal Gear Solid 4 and V do a very well job with this, all the background noise, especially in 4, the european level, where they not only took pictures for references, they also recorded authentic (german?) city noise and train station noise.

Maybe not THE best, but I'd say the PSP Corpse Party games with headphones are worth mentioning. Blood Drive has weird-ass audio balance issues but the PSP titles are impeccable for a handheld thanks to the clever use of binural audio.

I'm not an expert on this but interested aswell.
I can say though that Bloodborne has EXCELLENT sound-design. You can not only see your surroundings but also hear everything. There's a chapel full of werewolves and its chilling to just stand there and hear their footsteps slowly getting louder and closer
