I like FFVIII, and all my favorite games are love stories, but FFVIII has some SERIOUS flaws. The plot hardly makes any sense, and it is just TOO much of a coincidence that all those orphanage kids just HAPPENED to meet up again as seeDs and the matron just HAPPENED to become an evil sorceress and do battle with them all down the road. I literally cringed when I got to the part where this "plot twist" was revealed.

I'm a hardcore fan with FF8, so many times I would even try to escape reality with lucid dreaming, I would be in Balamb Garden where I would often train with Zell in the training center and help Selphie with the Garden Festival, but one day as I was talking to Selphie, we went to my dormitory for a private talk. She immediately said, "You know you could live with us forever.." I gave her a confused look and she continued, "We understand that you live on earth and you REALLY wish to live here". I then said "How..How did you know?" She then giggled and said "Because we've been watching you, silly!"
This was a dream come true and I almost cried right there. She then said, "I talked with Headmaster Cid and he agreed that you would be PERFECT for SeeD, you just have to do...one thing". She then held my hand and looked deep into my eyes and said "...You have to kill yourself for the transfer to work correctly." I then gave her some questions, "How long do I have before the deal expires?" She then said "Cid said 3 months.." I added by saying "What's the most painless way?..." She giggled again, "Suicide will require pain buuut...if you want it quick...Get a gun and a nice shot to the head works.
I then agreed and she gave me a kiss on the forehead, "I know this will be tough but once it's over and done, you'll get to live here!" I then woke up and this was last week and i purchased a gun. I might actually kill myself because that dream just felt too real to be fake and my life isn't doing so grand.

on the other hand, Triple Triad is a great game that could very well be made into a real game. integrating it into the game in a meaningful way (card ability, crafting) was one way to make it wonderful.
the music was nice, though the overworld music was comfy, it was kind of snoozeinducing.
so ultimately, music, sidegames, and some of the characters were alright. but the levelling system was weird and outmoded, and the story made no sense. kinda like FFX.

Why would he tell Edea to start SeeD when he's aware that SeeD causes all the time crisis bullshit and he's not even sure that this timeline ends with shit going back to normal, since time has been kompressed already? Also isn't everyone dead in Ultimecia's time? Does that mean Squall is responsible for destroying humanity in the future?

I completely disagree. Video games are the best platform for love stories. In fact, I really only play video games FOR love stories for the most part. Those are my favorite games and I actively seek them out.
Consider this. Video games are better than movies because they are longer and require more investment in the story. They are better than books because the text dialogue is accompanied by video, and often even voice acting. Seriously, there is NO better platform for enjoying a good love story than a great RPG. It's the whole reason why I even play games.

The problem with FFX was the sphere grid. At the start, it was kind of fun, because everyone had their own path and leveling set up. But towards end game, when you want to max everyone out, everyone plays really similar. All fun just melts away, and you realize that Lulu, Auron, and Kimahri are basically pointless with crap overdrives. Every character basically plays the same save for Wakka's range, Yuna's summons, and everyone's overdrive.
There's no feeling of 'Okay, this character needs to tackle this role. And this character.' No. Everyone just becomes the same.

7 has a limit on how many materia you can equip. Even if you equip the master Materia for each color on each character, you still have to utilize stat materias, blue materias, and other factors you can customize.
8, while not my favorite either, required far more work than FFX to make each character have everything, and making each character have everything is just pointless, since enemies level with you. You benefitted more by having each character specialize in certain abilities and set ups per fight, requiring more strategy.
12, while yes, is a game where everyone can learn the same thing everyone else can learn (except Eidolens, but they sucked), it had usage of Gambits and strategy that kept things interesting. You had to find the rhythm of the fight, and command your characters thusly.
With 10, it would get frustrating because for some of the major battles, it would just be 'Quick Hit, heal when you need to, and spam Wakka's overdrive'. There was no real fun strategy to it in the end. Towards the end of the game, every fight felt samey.

They don't know the details of Ultimecia's world. Besides, it's only the concept of his machine that still exists in her time. It was developed with future technology. Dismantling it would have no effect on history. Also not seen in-game in any timeline.

Ultimecia doesn't make a physical appearance in the past until her death. Technically, the first time they meet her is when she is possessing Edea. Squall's group is able to travel to the future because of an anamoly in the time compression, just like how Ultimecia travels to the past to die when time decompresses again.

In order for a sorceress to die, they have to pass on their powers. Edea was just the first person available when Ultimecia traveled through time at the end of the game. The major theme of FF8 is inescapable destiny. Her death is already an absolute fact in every timeline.

By the time anyone in the past is even aware of the time loop (Edea and Cid; only the fact that Ultimecia will threathen the world's future), it's already too late to change destiny. No one knows the irony of fate. Squall only knows that SeeD has to exist to combat the future sorceress. He makes sure it happens, just like he does in every loop before and since.
Memory loss is also not a plot twist. You can read about it literally 5 minutes into the game if you look up the term on Squall's classroom computer.
What people should bitch about in FF8 is the retarded shit like how Seifer found the Lunatic Pandora, got inside at the bottom of the sea, powered it up and managed return it to the surface despite the crushing pressure.
