The only games there with an absurd learning curve are fighting games and Quake. Fighting games because they're a niche with hardcore players and require lots of precision to do much of anything, Quake only because it's a niche with hardcore players. Dark Souls' single player should have provided you enough familiarity with the game to hold your own if you're invaded, and all the other games have decent skill based matchmaking to match you up with people around your level.
