In DQ case, each version has its own feature.For example, PS2 has orchestra sountrack and 3D graphics but lacks in some extra content that DS has and battle can be a little slow due to PS2 disc (I assume that this only happen in real PS2 though). DS version has additional things and battle can be really quickly but lacks orchestra and graphics are like PS1 games (DS use DQ4 and DQ7 engine)
And about FF, changing classes can be really fun in 3(I prefer Nes version though) and FF4 really worth the playthrough

Also, I played the first part of FFIV on PS1 and there are no loadtimes, surprisingly. V and VI, however, have the terrible load times.
Try some of the Mana series. Secret of Mana, Children of Mana if you have friends to play with, and Legend of Mana are all good RPGs. Legend of Mana is my personal favorite.

The shadow issue is so irrelevant and small you don't even notice it, but disabling them altogether really takes away from game visuals since it doesn't just remove shadows from you, but everything else as well. The game looks MUCH worse without them.
