Legend of Grimrock is good, and Grimrock 2 is amazing, but they're more about puzzle-solving than dungeon-crawling, really. Still, the puzzles were very, very good.
Though if you like that kind of thing and you don't mind something that looks a bit cheaper and less polished, but still manages to be interesting, try Fall of the Dungeon Guardians. It's basically Grimrock, but with realtime-with-pause combat.
Temple of Elemental Evil is also really good, and if you know how D&D 3.5 works, you can sort of break the game.
Also Morrowind.
And Ultima Underworld. Fucking Ultima Underworld, man.
