Most of these lists are made by matchup numbers.
Kenshi loses to a lot of characters, so he is lower on the list, well characters like Cassie or Shinnok have lots of favorable matchups.
Cassie Was definitely the most fun as a character with good dialogue but she had shit moves and lame combos. Maybe it's just because I could never land caged rage. Erron black was well done to me because his lack of development made him seem more mysterious and it's pretty fun playing as a scumbag. The rest of the characters were hardly memorable except for when they brought scorpion in as Hanso and he finally did some shit for himself rather than be a minion.

You pretty much memorize the button commands and press them exactly. Hardly any need to actually time the attacks to the animation unless you're trying to get some jabs in to start the combo or if you have a move that requires another input for precision (like Jax's ground pound requiring you to move the direction if you want it to be closer or further).
Removing negative edge (I think it's called that, haven't checked options in a while) helps. Once you remember the button order, your character will pretty much do the attacks automatically.

Just find a list of combos and practice, eventually it will sorta make sense.
MK is too odd and abstract to really explain in full detail.
However one thing I will tell you, HIt stun does not work like KI or any other fighting game.
Hit stun doesn't not guarantee a combo, only pressure. You can auto block during most instances of hitstun.
IN order to combo you have to use launchers, or pay attention to cancel advantage, the more cancel advantage something has means that a normal xx special will be a natural combo, and can't be interupted.
