Pokemon really isn't wasn't ever as good as most people think. Most of them aren't even made all that well.
Undertale sucks too of course, tries way too hard to be funny in the vein of Space Funeral and Barkely 2, but all the jokes feel contrived and insincere and the actual game lacks engaging mechanics or design.

I think you'll be pleasantly surprised. The gameplay is MUCH harder and it actually has strong stories and music. I don't think it'll change your mind on voting for Undertale, but I do believe it'll make you have some positive feelings towards modern Pokemon. Just don't play Gates to Infinity.
