Morrowind has some cool characters and interesting locations, but first and foremost it's emphasis is still very much on being a fuck huge sandbox, as a result there's a lot of compromise, still a great game mind you.
Baldur's Gate has solid characters, but the world is boring as fuck, less so in the sequel and expansion, but nothing mind blowing, again though a great game and great series.

You can play any of the Fallouts without having played the others. There's some stuff you'll miss out, but nothing major. The only one that you might lose out on some bigger stuff is if you play Fallout 2 without having played Fallout 1. The reason being that the MC of Fallout 1 is talked about in Fallout 2 in some places (and also your character is a descendant).
