He's mostly talking as far as gameplay goes.
FPS's guns usually have little variety, maybe some flavour bonus things like grenades thrown in.
The only big difference that shows up is physics, such as your character movement and jumping skills. Some newer games even have such similar physics that if you played one, you played all.
But for the others.
RPGs can be fully turn based/real time with pauses to make choices/ fully real time. This alone is more of a difference than most FPSes.
Puzzles can range from a sudoku games to some VNs, to many other things, but that's not a good pick anyway since most puzzle games are the ones who could be perfectly emulated outside vidya.
Racing games already have kart racers, simulators and stuff that's neither like NFS.
Sports can be every fucking sport.

Not the way it works. Different platformers actually work differently. Super Metroid, Donkey Kong Country, Super Mario Bros. 3 - None of these feel similar at all.
You can't just apply a criticism of FPS games to every other genre. Sorry. That's not how it works. You can't just deflect when something you like gets criticized. Blandness and repetitiveness is a problem specific to the FPS genre.

Doom is focused on dodging attacks. Almost all of the enemies use projectile or melee attacks, and all your weapons most effective at short range.
In TF2, the game changes dramatically based on what class you pick. Heavies have to find ways to work around their slow movement and get in close range to use their minigun, Soldiers have to master leading projectiles and rocket jumping, etc.
CoD has a much greater focus on mid-range combat and slower movement, with assault rifles being common weapons, and having to aim down sights to hit anyone more than a foot away from you.

Are you kidding me? The 3 games I listed don't feel remotely alike! Even basic movement is different; Doom has you running absurdly fast to complement it's 'dodge everything' design, TF2 has speed dependent on class, with some having advanced movement options like rocket jumping, and CoD has a lower base speed but lets you sprint for more speed, or ADS to aim better at the cost of speed.
The level design is completely different as well: Doom has large maze-like levels with lots of secrets, TF2's maps generally have one main path, with some side routes and rooms off the main road, and CoD has it's infamous hallways.
