Just use cannon instead of parrying guns, or even torch. Having a parrying gun equipped makes the game easy mode most of the time.
Dark Souls is easy mode both with magic and shield or agile roll roll roll builds. You have to seriously nerf yourself to have a hard time in the game, in BB you just have to ignore one single mechanic

DaS magic was weak as fuck bar CMW compared to the utter balancing trash that was Drake Sword ----> Literally any Burger King weapon bar the greatsword to carry you throughout the rest of the game and maybe even NG+, magic spears were garbage compared to just 2handing a black knight weapon and spamming attacks

Estus was much more gimped then blood vials are, they were nowhere near as fast and most bosses in DaSII would actually react to you healing and use some kind of heavy attack. Huge Manatees were even worse, being abnormally slow, as were any healing spells.
Blood Vials are like the worst parts of grass and estus combined into a babbys first healing. Fast, plentiful, farmable. You don't even run into situations where you can't use them reliably until like NG+2

Bosses and enemies react to you using vials too you derp, and their attacks are much faster and generally have longer range. You have to time your heals to when enemies are low on stamina or you're not within range. Yet another example showing you haven't played the game.
