III, V, and VIII are generally considered the best.
III is one of the best-selling and most praised game in the series, SNES/SFC remake w/fantranslation or the GBC remake are the recommended versions
V is a favorite of many including the creator himself. PS2 version w/fan translation is suggested for GURAFIX and the orchestral soundtrack, but the DS version has an extra character route.
VIII is one of the best RPGs on the PS2. There's the 3DS remake coming up that sacrifices quite a bit of the visual flair the PS2 version is known for, but also comes with a notable amount of additional content including additional party members and an alternate ending.
