think very hard to anticipate everything a player might do, take a break, then think again to spot what you missed

Look for games with active modding communities and go through tutorials.
Back in the day there were a lot of pretty decent content about HL2, for instance, not sure what is in rage now. Maybe CSGO mapping communities?
Also it is probably a good idea to to find videos and blog posts talking about design decisions in games. Off the top of my head I remember this guy (simonschreibt.de/game-art-tricks/), but it's more about various tricks in game development.
And of course there are books about game dev like HL: Raising the bar that mention cool things.
