Modded GTA and Midnight Club is about as good as it'll ever get for non-track riding games.

Midnight club has an issue with bikes though, first of all, city cant keep up loading fast enough.
Racing is pretty much impossible if you dont memorise whole track by heart.
And the fucking worst, camera tilting with bike instead of stay level if you drive cockpit or bumper cam.
Apart from the the best one bikes right now are on PC.
First one is "GP bikes" is good physics wise and has lot of mods.
