Talos doesn't want to just help humans live their lives without any problems, in a sense he doesn't really care about individual human, at least it seems to be that way. He cares about collective outcome of Mundus and goals set way back when by Lorkhan.
CHIM, especially realization that comes with CHIM prevents you from random fuckery with all of the metaphysics, especially since CHIM causes ultimate empathy and is ultimate empathy, you can feel all of existence as part of yourself and understand it. Why the fuck would Talos want to erase Daedric Princes that are part of the Wheel structure? Not to mention that CHIM is exactly Aurbical tier power, it can only change what is part of the dream, not what is above it, thus it can't actually change the structure of the dream.

You're looking at it the wrong way, assuming that aedra are good and daedra are bad. All of them are just agents of change, whether that be for what life on Nirn thinks is good or bad is irrelevant. They're primal forces in the same vein as 40k Warp entities.

The Dwemer realized that the TES universe was bullshit, that it was an inconsistent dream where doing too much bullshit would confuse the universe and cause reality glitches.
They discovered this by using logic, reason and the scientific method. When these things actually confused the universe, they realized that almost certianly the world was too stupid for them.
By exploiting these reality glitches (mainly through manipulating sound) they grew really powerful and advanced but it was all boring to them. They decided that rather than fuck around in such an idiotic reality they could ascend to a "true" reality by tricking the entire universe.
So they built a giant steam powered mecha called the Numidium, a Bronze god of sorts, and fucked with the heart of the "dead" god Lorken. Their goal was to trick the universe into thinking they were collectively Lorken, which would ascend them into the smart universe they wanted.
but it backfired and they fused with the mechs "brass skin".
This made the numidian the "god of atheism" which is why whenever it's activated Aka'tosh remembers nothing exists and time dies for a bit.

Probably did not achive CHIM until end of Morrowind, it is strongly implied that when you are a God you can not achieve CHIM because you place your "I" above that of the whole existence.
Trials of Vivec is out of game Developer roleplay regarding what happened to Vivec after Morrowind and that's probably close to what actually happened, there Vivec achieves properly achieves CHIM during the trial after he lost his divinity.

What? Malacath is Trinimac,Trinimac is one of the few remaining mysteries of TES lore, but what is certain is his status as an aedra, before his corruption into Malacath. Either way, the exact definition for "daedra" is really kind of loose. Most of the actual daedra aren't the traditional daedra term (et'ada that didn't give themselves up to make Nirn). Malacath's a corrupted daedra, both Sheogorath and Jigglebags are both Lorkhan's shades, Hermaeus Mora is one of the prototype Nirns, Meridia is a magna ge, etc. These days it's mostly just "big scary immortal spirit"
