I've been considering the two Final Fantasy games for awhile, but my biggest concern is whether or not they'd really be such an immersive world. There are so many things I think would be more interesting if they were handles/created by players and not NPCs, like if there was some villainous guild rising in the background, and even "simple" jobs like a blacksmith, which are practical but would be insanely boring to spend all your time on as a game.

There are so many questions where I'd pick both answers desu. And most of the question's answers would vary based on what game is played. "Multiplayer game" is not descriptive enough. What I love about PSO is the fact that the environment and design of the game isn't bloated or overcomplicated like modern mmos are. Sure, the game in its early life had griefing, but almost all MMOs do to start.
Everything about that game feels natural and welcoming. If I played the game right now (assuming the blue burst fan server isn't dead), I could have no trouble doing whatever I wanted. Hell there are even players out there that will happily give tips and tons of free items to help you get started and have fun. (Even the hackers are somewhat nice)
You don't get that with most MMOs.
You'll have people with shops selling overpriced items and garbage, level 100+ in epic gear obnoxiously flaunting and bragging to the other level 100+, people randomly dropping out of quests right when you need a hand, and grindy quests full of unhelpful crap.
And where is the good loot? Locked away in respawn loot zones full of campers girindingn away while chatting about RL stuff.

For consistency's sake I just answered questions based on my experience in vanilla wow which was kind of the only time I really felt like I was part of a 'game world'.

Back then (and now) I very highly valued my close group of friends, I mean it asked a question about a 'secret chat channel' and our channel in question still exists and is in use to this day by those crazy fucks who are still playing. But I was also pretty heavily into server drama and other shit like that.

In honesty, PSO Blue Burst, Diablo 2, and the original PS2 Monster Hunter are the only truly fun MMO-styled games I've played
What do they have in common? Excellent group based PvE, minimal grinding to get useable gear (D2 and MH do have a lot of grind on the higher level stuff though in honesty), and expansive environments that are interesting to explore, (not so much PSO, but it was one of the first of its kind so its sort of forgivable)

Any time there's an option for friends, I pick that one. I don't have a lot of friends but I value the ones I do have and would prefer playing video games with them over owning a house worth millions of gold for instance.

That's kind of my point.
Most games like these either swamp you in so much gear with minimal variation that it becomes silly constantly managing throwaway garbage (Borderlands is terribly guilty of this. Diablo 2 is, also but the good gear you keep is very easy to spot and store and doesn't stay a burden long since you can portal out. Torchlight adds a brilliant feature of just selling that shit right away via the pet), or make you grind endlessly to get something useful.
You don't get to the high level because you're either bored from uninteresting loot, or too frustrated constantly hitting progress walls.
High level can have tons of grind because by that point there's usually plenty of others things to do in the meantime.
That's how good games like this are SUPPOSED to work.
In practice however, developers get too greedy and it kills a community before it gets a chance to sustain itself.

What I like about Monster Hunter, is that you can sidestep the loot wall problem to a good degree by making use of the games mechanics, traps and bombs and healing items ect
Killing a kut Ku is hard the first time for most people. But once you get enough skill and the right build its like an irritating gnat at most.
