Attack a few times and then roll. You are literally untouchable since Geralt leaps 6 feet whenever you dodge, but if you fuck up, there's Quen.
It's the fastest way to end a fight, and the only reason you'd not use this method is if you're a retard. I put the game on Death March and only died because of falling damage.
