Die a few times, experiment with all the items and talk to NPC's till you're sure they've finished their dialogues.. You'll figure everything out. It doesnt matter which direction you go.
Also if you're dying a lot try different strategies. Or classes while they dont make too much of difference in the end but some classes are easier to begin with.
I hope youre playing Scholar of the first sin and have the DLC.

It happens every time you die. Eventually it gets so low that you die when you respawn

If that is the actual first boss you've encountered then you've actually skipped the first area and boss

Have you made the platform you're fighting dragonrider on bigger? Might help. There's a few switches on the way.
There is one other route you can go at the start of the game, might be worth finding as there's a lot of loot along that way. You might find a weapon that "clicks" for you better than what you're using.
You lose a bit of health every time you die until you're at 50%. There's a ring near where you are that caps it at 75%, look around a bit. Becoming human restores it, but it's not really worth doing just for that.

Pinwheel dies faster because his health pool is laughably low, however if you judge them purely on attack patterns and abilities Dragonrider is the most pathetic in the series.

Mediocre experience. Get ready for lot of tracking and enemies turning in one place. If you played DS1 you should expect as much.

Well, no. There are like 4 paths you can pick from hubtown, but I think only 2 don't need certain item/stats. Dragonrider was one of last bosses of 'first part' of the game I encountered, so I just facetanked him.
If you are having really big problems, summon other player or npc. You need to be human. Boss hp scales to amount of players/characters.

Welcome to great mechanics. It will keep getting shorter every time you die to around half of your max hp. Restoring humanity fixes it.
Unlike someone earlier, I will tell you to look up things online. Some items simply break the game or bosses that comes right after them. At some points in story, you might not be sure where to go as well.
Greatshields can make some parts of game easy as shit.
Level up you adp (the thing that increases agility) to around 40.
Stats get dimished returns, the more you invest in them. HP and Sta gets first slash at like 20, then 40 or 50 points. Other stats get hit first time at around 40 invested points.
Gear progression is pretty bad, even worse than in DS1, but you should've expected as much.

Dragonrider has like 3 moves total, all easy to dodge even with very low agi. You can kill him even if you do only 10 damage per hit, as long as you just don't die.

Step one stop skipping areas.
Step 2 go left at the path (instead of right towards the dragonrider), kill the monz, and cross the bridge. There's a chest on the other side of the bridge before the ACTUAL bosses white door wih the ring that stops your health from decreasing.
Step 3 stop counting deaths. With the way you play you'll run out of numbers.
Step 4 just git gud scrub. You beat DS1 how can you struggle with minibosses with only 3 attacks:/

This. The very first thing you want to do in this game is check the left-upmost part of Heide's Tower and get the ring that prevents health from ever going lower than 75%.

Don't go to Heide's Tower of Flame first, go through Forest of Fallen Giants- it's around this weird back corner in Majula. You will meet the Last Giant and The Pursuer in this area as bosses.
Don't be afraid to Google progression routes, OP.
