Wanted to got 144hz/1440p but because I got cĂșcked with my previous 970 Nvidia and the 980ti/Gsync wasn't an option. Went with pic related instead.

It's pretty nice. I'm suprised how well multi-GPU is supported nowadays.

And you get a much newer platform with potential for upgrades.
Whereas on AM3+ you're stuck with PCI-E 2.0 (so no SLI), no M.2, no SATA Express, no USB 3.1, slower SATA 3 implementation and so forth.
A year ago I might have seen it differently, but as things are now Bulldozer is dead and buried.

USB 3.1 (although later Z97 boards had it too)
M.2 is now PCI-E 3.0 x4 and not PCI-E 2.0 4x, so much higher bandwith, many boards have two slots as well.
FIVR (voltage regulator) has been moved back to the MB, so better OC, less heat.
DDR4 support - DDR3 will slowly go away, I wouldn't invest in it anymore.

Strong performance per core in a CPU matters, but the GPU matters as well for emulation. Do not neglect it.

From experience, a 512MB integrated AMD card on a laptop is enough to emulate Wii games at native res with minor stutter but not PS2 games. A 300MB iGPU from Intel won't cut it because Intel sucks when it comes to graphics.

I've got the 390x. Seems to be better than my 270x, but i feel like my cpu might be holding it back. Witcher 3 still doesnt want to run at 60fps though, so thats frustrating

Question: I'm building a computer for the first time, and I have a budget of around 800$. What video cards (and possibly motherboards) would you recommend, and with that in mind, should I buy them today/ cyber Monday?

The world of a difference. I want to swap to a i3 but don't have the cash for that + a new mobo. Most of the games I want run well enough for me on high 1080p, some do have to get the bump to 720p. Only things I can't play at the moment are Musous, because they are CPU heavy as hell, want to play SW4-II and DQH but that doesn't justify a $160 purchase right now

Might upgrade to 8GB ram but don't see the point since I'd need to buy new DDR3 ram when I upgrade.

Can run FO4 at 120fps without a hitch on my 980ti, just the bugs that crop up because of framerate tied to game speed
At 60fps for some reason it's a stuttery mess unless you run in borderless and tune the ini files right, but you can still get it running just fine
