Long story short, you'll need to get a specific Guild Quest that gives the right bias that you're looking for. The following chart has the list:

Note that there are in fact multiple versions of each relic armor (as shown by how, for example, Zinogre armor appears under multiple slots). You'll have to find more info about the specifics to find the exact piece of armor you want.
After you find what armor you want, you need to pray to RNGesus to get the EXACT Guild Quest that gives that specific armor. Also note that relic armor does not gives skills in the traditional sense. Relic armor gives no slots (garbage), 3 slots (mostly garbage), or relic skills such as edge master, edge lore, and so on.
TL;DR: prepare your anus for autism grinding.

We're talking maximum autism grinding. That pic is my current set which uses only two relic pieces (Rebellion relic legs and Wroggi waist). Both have Edge Lore +5, and it took me at least 20 hours to simply grind the GQ's to get the parts. That was not accounting for obtaining the quests themselves, as someone sent me them. I would imagine that if I had to grind from scratch (get the right GQ's), it would take considerably longer.
You can either pray to the RNG gods or hope that someone has the right GQ out there and is willing to send it to you. Then you can spend countless hours completing the GQ in hopes of getting the exact skills you need on the part that isn't guaranteed to be given to you.

All weapons are good, but some are better at some things and worse at othersexcluding Great Sword and Charge Blade because Capcom loves their darling babies.
SnS requires having the right weapon for every monster, being attached the monster's every move, and going into every hunt Batman levels of prepared.
The game gives you the SnS by default because it has a shield and can use items without putting the weapon away, so it seems super beginner friendly, because it is.
However, the gap of gud between nubshit and actually contributing is relatively gigantic compared to any other weapon weapon due to its low damage. Only bow and LBG come even close with the size of their gap.
If you're having trouble grasping the concepts of how to play gud-tier SnS, don't be afraid to try something else. It's not expected of you to master literally every weapon.
If you like the shield, try the Lance. It's simple enough and also a good weapon for beginners.
If you like the fast attacks, go Dual Blades. Just be aware that it has the same requirement of a weapon for every monster, but there is fuck huge difference in DPS for minimal amounts of effort. Always carry 20 whetstones.
If you like the fast attacks but want more rangelose all hope because LS is absolute garbage in 4U
If you want some weird shit, go Insect Glaive or Hunting Horn.

First, pick a good horn.
If you're playing with a group, the Seregios HH is one of the best you can bring along, thanks to its skills, and the fact that you'll probably never have to sharpen or put it away.
Other decent horns include the Gogmazios one, the Teostra one, and the Molten Tigrex one, if you can awaken it, but figure out what works well for you.
Second, White-White or Purple-Purple is absolutely necessary, and make sure to Encore it if you don't have an armor with Mind's Eye or Steady Hand on. It makes it so you run around absurdly fast with your weapon out, and the Encore makes it so you never bounce outside of Apex monsters.
Also note that the Special Attack button (either the top right of your touch screen or Start/Select, depending on your settings) is a very fast White/Purple note. Use this when you want to get your first song out fast.
After that, run in and start swinging away. Learn what your songs are and how to play them, and get good at hitting monsters with your attacks while preparing songs at the same time. Keep in mind that your forward-A attack can play two notes, one A-note, and one note of any other color if you press it before the second swing connects.
Your recitals and encores do a lot of damage if you can hit with them too, so keep that in mind.
If there's no hammer user (or impact-happy charge-blader) around, keep to the head for lots of stun damage and exhaust damage, and keep your team buffed at all times. You'll be credit to team and help them kill stuff faster and more efficiently.

Besides, with Gunner it's about keeping a relative distance. Nothing too far away, nothing too close. Besides, you can just go into scoped mode instead of over-the-shoulder. That's what I do.props for knowing about the Tap L trick for quick-facing the camera. Next to nobody knows about it anymore, and it's a lost art

Make setting up your important songs your second priority, after WhiteWhite or PurplePurple. Try to do so while hitting the monster if you can.
So, say for example you're using the Seregios HH, like I often do. After your self buff and encore, the most important song to play after that is usually Negate Stamina, which you can ready in three attacks. After that, if you can, hit the monster while playing and encoring, but if you can't find a safe spot near the monster to do it, you'll better serve your team by running away a bit, playing the song while the monster isn't focusing on you, and then rejoining the fight to start up another song.
Just because buffing is your first priority overall doesn't mean that HH is a slouch when it comes to damage, It can do quite a lot if you know what you're doing. Not attacking a monster when you have the ability to is time wasted, especially if you're just running around with a song loaded up, waiting to play it.
Typically, if all my buffs are up and none are in danger of running out anytime soon, I try to get near the head and alternate X and A for an infinite combo that just swings back and forth and is easy to roll out of. Plus, with the Seregios HH, you can easily combo that into a dual A to X and Def Up L everyone when need be.

HH is more of a team weapon than most. You've got to pick the right horn for the job, since all horns have different songs on them. Seregios HH shines against monsters with wind pressure or in teams with Dual Blades, Switch Axes, Hammers, and (to a lesser extent) Lances, Gunlances, and Insect Glaives.
I picked it up after Charge Blading through all of LR and HR, as a way to change things up and help out people as we plowed through G rank stuff.
Also, make sure that whatever armor set you've got on, give it the Horn Maestro skill. It makes all your songs last longer so you don't have to buff everything so often.

Subspecies wise, that depends on the monster. A lot of the earlier species are just the same animal but with different colors and stronger attacks. See Rathalos, Rathian, Gravios, and so on. After gen three they've been mostly extremely different in terms of habitat, elemental attacks and weaknesses, but usually still exhibiting the same behavior. Glacial Agnaktor, Rust Duramboros, Ash Kecha Wacha are a few examples. When it comes to lore it's probably just the same as in real life. There's an assload of different varieties of creatures in the world and this world seems to be no exception. People like to say it's just lazy recoloring but I'm pretty okay with it, it gives the entire MH world a feeling of realness.
As for variants, they're genetically identical but that specific monster has become absurdly strong to the point of taking on more fierce appearances and cuh-raz abilities. Furious Rajang, Savage Jho and Raging Brachydios are the most famous examples.

1. Pick an easy weapon like Sword and Shield. Try the other weapons only once you're used to the game and the controls and shit.
2. Hunt a monster. Learn its patterns. Exploit openings.
3. Pick the right element of weapon. Don't bring a fire weapon against a lava wyvern. Stuff like that.

and remember, you need at least a total of 10 points in any skill to activate it.

I was dissapointed in what I saw in the aerial style because you don't arc over the monster and fire downwards when you're on top of them like the bowguns.
That being said, the Gunlance has the heat gauge now, which as you continue to use shells, you make your weapon hotter and do more cutting damage. doing melee attacks will eat some gauge.
Wyvern Fire will eat some significant heat, but lock it in place for a while, allowing you to use it a lot at that heat level.
Not sure which style it is but you can also use a bigger more persistent wyvern fire that's like a big fireball.

Striker just allows you to equip more of the special skills and makes them recharge faster.
Bushido gives you a few frames to perfect dodge or block, which lets you follow up with some decently strong attacks.
