After seeing some Eastarwars gameplay with Vader and other lightsaber wielders, it's kind of sad that the effort probably won't get put into a singleplayer game.
It would be pretty cool to play through something like a more condensed version of The Clone Wars TV show. Play through the story from various perspectives, be able to walk around areas and interact with NPCs, be able to create and customize a character.
They could do something like let the Clones/Ranged characters be the FPS sections and the Jedi/Sith/Melee characters can go about twirling their weapons, doing acrobatics and force stuff.
It could go from the start of The Clone Wars up to the point where Anakin loses his fight to Obi-Wan and becomes Darth Vader (which is where the CGI show should have ended).
