TIE Fighter. It's a classic Star Wars space combat sim where you fight for the side who was in the right.
You need a joystick, and it doesn't support rolling - but other than that, it's a very solid game. The missions themselves are fairly varied, and at least interesting - and they don't spoonfeed you the "best" (or even a good) way to complete them.
