One of my favorite things about Undertale's soundtrack is all the leitmotifs and recurring tunes that appear throughout it.
The Ruins theme is heard in the Waterfall theme, Quiet Water, and both of Undyne's themes. The Snowdin theme is heard in both Shop themes, the Dating theme, and even in Hopes and Dreams. Ghost Fight is remixed for Dummy!, Napstablook's house, and Spider Battle. Undertale (the New Home theme) is all over the place.
I know this isn't a new idea, nor is it the first game to do this, but it does it really well and can make for some emotional moments when a song from early on is remixed in a song late in the game (part of Heartache appearing in ASGORE).

Undertale's OST is really good, but the single best OST of any game will always and forever go to DFO, until some game manages to put out more than 70 great songs.

The only downer is that most of the good music is now locked until level 55 thanks to the Metastasis update. The first half of the game became an utter slog, since the new producers on the team wanted to make it more "fresh".

Border of Life is my least favorite boss theme in any Touhou game, but Ultimate Truth is my absolute favorite final stage theme, even more than Hellfire Mantle and Kanako's stage theme. It's a damn shame, too.

12 isn't as great for me because I got stuck on Kogasa and Shou for so long. I also can't listen to Muramasa's themes for very long before I get bored. It and 14 are the only games with a disappointing stage 4 and 4 boss theme.

Undertale and Touhou 15 are the only games that have done that to me this year.
His Theme would make most people emotional wrecks if it broke out into more instruments continually. Great fucking song when the extra instruments hit all at once though.

Hotline Miami, Cave Story and Shovel Knight come close, but I still like UTs OST slightly more. All four are fucking brilliant though.
