When i need the courier to bring me my shit i just press F3, yet whenever i watch pros play they often select the courier, manually put their items on it and then have them brought to them, it seems like a waste of time to me.

A lot of it is habit. In warcraft, the most convenient thing to do was set courier as control group or cycle through your inactive workers, so for them it is just a part in getting their items.
In addition, you get more options when you control courier that way, you can set up a shift-queue path, you can empty courier items to make room for yours. In addition, in general WC3 vets are used to the function keys only affecting heroes.

The two red numbers are actually from the same attack. The top one (The one with the lightning bolt) is from a critical hit, while the bottom one (Which has a blood-drop next to it, but you can't really see it because the cursor is in the way) just signifies a big hit larger then I think 40% of your health or something like that. I don't remember the exact number off the top of my head.
So in the gif she got force-staffed and then killed the presumably extremely underfed invoker in one critical auto attack.
