I think the PS2 version has extra content and some FPS fixes.
Granted, you could play the GCN version through Dolphin and not worry about FPS.

FPS fixes are exactly what the PS2 version (and the HD versions) doesn't have. They're locked at 30 but the extra content makes up for it.

There is no "definitive version".
PS2 and PS3 versions have more content, but also bugs and halved framerate, and they're missing the (superior) Gamecube opening theme without the shitty J-Pop.
emulate it for GameCube and then get netplay multiplayer working for it, watching some niggas doing that on twitch right now.
