Swadia fails because its in the worst position in the game. Fiefs and villages may not seem that important but when your borders are almost constantly on fire.. Something's wrong with your homeland.

Does the AI actually prioritise YOUR villages and property over other AI villages. It seems like the AI will literally ride from one side of the map to the other, through my empire's entire territory, just to kill the 3 villagers remaining in my village. But I don't know if that's actually the case or if it just seems like it because I get a notification when it happens.

Fief decisions are based on your renown, your holdings, your relationship with the king, and the renown of anyone supporting you. And the other shit, like if you're a lady or requested a castle you took yourself.
Length of stay in the realm doesn't factor in.
So a lord can very easily end up disliking all his vassals or having several leave.
What settings did you play with? I think I had all damage on normal and battle sizer set to like 100 or so. It would be kinda unfair if I let it go higher because you would need A LOT of leadership to get over 150 while enemy has some bullshit massive armies of 400+. But I think I will reinstall and set battle sizer to max. This time I might finish it. Last time I gave up when I had almost whole map conquered but couldn´t break the fucking rhodoks

Armor helps out a lot during sieges where your mobility doesn't mean shit and the most important piece is probably the helmet. The random headshot can happen regardless of the scenario.
