MGQ is an obvious one if you haven't played it.
And most obscure/underrated IMO would be FairyFighting by Eluku. 2D fighter with about 18 opponents. I've probably spent just as much time in it as I have in MGQ. Excellent scenes, but the AI and fighting mechanics make for a good challenge when you actually want to vidya.

I've only beat the final boss with infinite health/SP on. I heard of a way to cheese the boss by getting between it and the right wall and doing the aoe wind attack. This is a good start, but we should give the fugging enemies a benefit of some sort. Maybe doing so charges your health or special move meter, but fugging takes time to complete and you have to make sure it's safe to properly fug them.
Meanwhile the surrender button will have to come at a cost that isn't 'removing the player from play'. Maybe surrendering is safe but it causes you to lose your special meter. But there is a mini game involved where you can lower how much of your special meter you lose. This way you're still engaged in gameplay when submitting.
