For starters there's actual dungeons. The map design in IV was really lacking and the fact that there was no VIT stat and the MC could learn spells made the game too easy

You should TRY SMT 1, if it's too archaic for you try either Nocturne, Persona 3 (Persona 2 if you have a PSP or feel like emulating one), or Strange Journey.
If you could do SMT 1, just try and move through stuff in order of release, if you don't like it you can probably skip it other than Raidou 1 and DDS since those lead directly into each other.
P4[G] and SMT IV should probably be played last unless you're okay with moving REALLY far backwards in terms of polish.
