"Senpai" is spelled せんぱい。 The ん is usually "N" except when followed by certain characters, then it makes an "m" sound. せんぱい romanized is senpai, but it's pronounced senpai. How it's translated is up to personal preference. Most fan-translators love romanizing things which is why you get "senpai", "fufu" and other things.
If we always, always went with the romanization then we'd all call Tempura "Tenpura".
