You know, I think once you get that earlier time-slot you have to be funny in a much broader way to appeal to more people. They have these late shows down to a science... I have no doubt that they have a whole different approach to comedy when they go on earlier.
A younger hipper crowd stays up for the very late shows, but the Tonight Show timeslot is pretty much the entirety of America before they go to bed, so they have to write the kind of comedy that can make Joe Anybody chuckle a bit as he gets sleepy for bed.

I personally really like Conan even though he's a shark like the rest of them.
