Believe it or not, the most knightly weapon was, swords aside, the mace.
Peasants were not allowed to partake in tournaments, however wealthy citizens could partake and even had the right to have a coat of plates. However they were limited to lesser things such as jousting, the most important and most knightly things were not open to the non-knights. And one of these tournaments was the mounted melee with maces.
That is why some coat of arms have a frogmouth helmet (those usually are coat of arms for people who weren't knights) and some with a kind of helmet like pic related. These latter helmets were used for the mounted melee with maces (and were used to denote noble descent on coat of arms)
Note this particular way of using frogmouth helmets or mace-combat-helmets wasn't used throughout history and it wasn't used throughout europe, but in France and Germany it was very popular.
Also: It really depends on the time, before the 15th century, I'd argue the most knightly weapons were the Sword, Lance, Mace and maybe the Axe.
