I think Nasu explained this, actually. What I remember him saying is that the name Assassin itself acts as a catalyst to summon Hassan. So the only way to summon a non-Hassan Assassin is to have a catalyst that usurps it, of which there are next to none. So it's not impossible, but very difficult.

-Kara no Kyoukai. This was originally a LN but it got an anime adaptation. Watch either but if you go anime route read the LNs for 5 and 6. If you went the LN roue at least watch the anime for 5 because it's fucking fantastic.
-Kagetsu Tohya, the sequel to Tsukihime
-Melty Blood, a fighting game/VN. Knowledge of both KNK and Tsukihime is necessary to fully enjoy this.
Mahou Tsukai no Yoru. This is about Aoko. You'll know who that is when you read Tsukihime. Currently not translated but a project is in the works.
