Most of Pac-Man's alts deal with hats, and a few of them refer to other Namco games. A good example is Mappy's policeman hat, and a hat like Klonoa wears. There's a handful more than that, but they show other Namco stuff a lot of love. No real palette swaps of note, but the gloves change colors based on the team you're on.
Also, yeah, there's a Ghostly Adventures alt that you can unlock. Thankfully, there's no voice acting involved with that, it's just an aesthetic option.

There's a ton of trophies I can recall off the top of my head that are way more detailed than they needed to be for trophies. Wonder Red isn't by himself on that one. The Wii U version is pretty guilty of it. The 3DS version, uh.. not so much. Trophies still look really nice there, though.

I mentioned that my personal THEORY was that they're pushing Mother 2/Earthbound, since that's what's fresh on everyone's mind after its Virtual Console release. Why they ACTUALLY did it is anyone's guess except for Sakurai's. Another guess is simply that they did it because Mother 3's not particularly popular over in Japan. Not in comparison to Mother 2, anyway.
If I were to hazard further guesses, Lucas will probably be DLC. I'd rather this be the case in the long run, anyway, since I mained Lucas in Brawl.

DLC roster size? At the moment, no-one knows. We know what kind of CONTENT there will be (as stated before, music, stages, characters, trophies, etc.), but not the ACTUAL content.
