The difference is primarily in role. Rosalina's role isn't that of a princess we're setting out to rescue. The general idea of Rosalina was mainly for people to relate her to Peach anyhow, since that was implied to be their intention for the storybook. Different enough to tell apart, but similar enough so that you can make the connection.
Daisy's existence, whether you like her or not, was just to fill in for Peach in Super Mario Land.

Not going to argue Rosalina's role.
But I'm going to defend Daisy's. Because she gets treated pretty poorly. And for what reason? A lot of anons fall back on the "She's not necessary" argument. If you really examined that argument, you could extend it and say a LOT of characters aren't necessary. For various other reasons. Like Rosalina wasn't really necessary in Mario Galaxy. But the story they wrote for her, made her interesting. All the koopalings aren't necessary, when you have Bowser Jr., but their personalities make them interesting. Any character from the RPG series isn't necessary, but the parts they play in the story, and the dialog they're given, make them interesting.
What daisy represents, is a potential spice they can use to flavor the world of Mario. The reason Mario originally saved her, was that he was in a different land, and it wouldn't have made sense that Princess Peach resided over a completely different land.
They could use that, and build on it. They could give Daisy the stuff that makes characters interesting. Hell, people are already interested. All they have to do is cultivate it.

I actually don't object to any of that. I never bothered with the "She's not necessary" argument because most characters aren't really necessary. You could very well argue the only ones who are truly necessary are Mario and Bowser.
All I'm saying is that the other dude shouldn't really try to trivialize Rosalina's place in the series just to justify Daisy's, because anyone else could do the same like I did. Because really, if you absolutely have to knock Rosalina down to justify Daisy, you're clearly making her look bad. Obviously I'm not talking about you, but about other people who do that.
