The same ethnicities that exist in the real world do not necessarily exist in fantasy universes such as Animal Crossing. Villager looks caucasian based on his flesh tone, but he may very well be asian, or something entirely different. Perhaps he is an ethnicity that doesn't exist in the real world. The same way the residents of Hyrule are Hylians, a race that does not exist in our world. And Gerudos are not "black" or "brown"; they are "Gerudos."
