The only game that ever did dragons right was Darklands.
Fighting a dragon in the open means that you either die or flee.
You have to find their lair by searching the surrounding areas which become increasingly desolate from the destruction caused by the dragon.
When you finally reach the lair the fight is incredibly tough and you'll likely loose a companion or two (perma death).

I love dragon threads! Dragon's Dogma did have pretty neat dragons. I thought finding the one in that forest was pretty cool. I was a low level so I was like OH SHIT, but came back later after killing my first one and easily decimated it by that point. Great monsters in that game all around.

Wandering into the drake in devilfire grove unprepared and spending multiple ingame days fighting it while it shouts in latin and murders your pawns is one of the most memorable things I've ever done in a videogame.

Grigori was alright, but I honestly liked the Daimon boss fight much more. The bleak atmosphere encapsulated the entire tone of BBI which accumulated all up to that point, where your fight with Daimon really pieces together all the lore you had found exploring BBI. Coils of Light was a great track for the fight and reflected my entire experience in that DLC. Really good boss fight in my opinion.

I'll give you that, but it killed the series because everyone is babby to deal with the idea that you have to play through it multiple times to see all the content, no inns, save tokens like RE series, 14-hour long playthrough, and finally the inability to abuse your dragon form.
I still think it's an amazing game that required more strategic movements and utilizing multiple weapons/armor for different situations than any other JRPG I've played to date. If there are any other games like BoF V: DQ I'd love to play it too (with the same theme of you can only use your OP ability one or two).

You're basically asking for high fantasy monsters with low fantasy resources for dealing with them. If dragons can even exist at all, it makes perfect sense for heroes and other creatures to exist who can kill them, by virtue of massive supernatural strength and resilience, mystic weaponry, use of magic, or something else entirely.
That's one of the things DD does quite well, really. Warrior smashes and Sorceror spells actually feel like your character has the kind of incredible power needed to kill giant fantasy monsters.

The problem with making enemies that big in a game is that you're never going to be able to fit it effectively into gameplay, outside of a God of War or Shadow of the Collossus kind of scenario. The second one isn't that much of a problem, but the first kind of trivialises the entity you're supposed to be fighting by turning it into an event rather than an opponent.
