I never played the Heroes of Might and Magic games growing up and feels bad man.
What are the games in the series I should pickup and the ones I should avoid? appreciate any help.

Modded Heroes 3 is generally the best one, they're all extremely long games if you're thinking about playing the campaigns so if you have limited time and don't want to be overwhelmed you can start with H3, otherwise give them all a chance.
Heroes 1 is the objectively worst one since it's the simplest and that's where the franchise started, but the campaign is relatively short (relatively being the keyword) and would let you see how the franchise started.
Heroes 2 is an improvement in every single way, a very good game, one of the best.
Heroes 3 changed art style from drawn fantasy to pre-rendered 3D (for units and towns) but gameplaywise it's the peak of the series provided you mod it. You will want the Complete version from GOG (avoid the "HD" version from Steam, that's base game without expansions ported from tablets), patch the Complete version with the "Heroes 3 HD Mod", google it and after you're done playing the game and the 2 expansions you will want to look into the Horn of the Abyss which is a recent unofficial (but feels like a fully official product) expansion to the game that improves upon it even further.
Then you've got the polarizing Heroes 4 which drastically altered gameplay in some aspects and thus it's a love it or hate it afair in the fanbase, you will need to try it yourself and don't listen to faggots telling you to avoid it. Just make up your fucking own mind.
Then you've got Heroes 5 which returns to the more cartoony fantasy art style, but in 3D. Gameplay has been changed from combat being hex-based to grid-based, but it also added some much needed improvements to the series, modded with H5.5 mod it's arguably best in the franchise contending with H3.

Now I want to get more familiar with the Warhammer 40k universe, and I was thinking about buying one of the many novels that have been released. The problem is, I have no idea where to start. There are so many books. I'm looking for a book that gives a general introduction into the WH40K universe. A book that shortly describes the different races...

I can't really saw what's the absolute scariest for me since there are aspects from the horror games that give them a unique creepiness. Like Doom 64 for example, Doom isn't really a horror game or that scary of a game as a whole, but listening to Doom 64's OST will make you paranoid and scared shitless.

Pretty /comfy/. Got a nice and tidy empire with an enlightened vassal doing some expansion on their own. Got a fun 2v2 rivalry going on with my little alliance of capitalist atheist space turtles and mushrooms versus the spiritual and communist alliance of space foxes and space birds going on as well.
Unsure what to do with those new self-declared ULTRA TURTLES in my empire, but they are more adaptable than my core species so I feel the individualist way would be to let them become specialized colonizers for the trickier planets.
Should I give them a sector to prosper in?
