The scenes worked much better in the books since you never really saw any of them, just pieces here and there that Theon remembered.
They couldn't do that in the show though since you don't have access to a character's thoughts.

because doing what the book did (having theon disappear for 2 books/seasons and then reappear as reek) would've been too confusing for the audience - the show doesn't have access to theon's inner thoughts and refused to do traditional flashbacks so communicating his torture without directly showing it would've been impossible. that, and D&D love their torture porn.
