In the first movie, which we have to examine in a vacuum since the others were independent creations elaborating on an idea in their own way rather than continuing a specific lore or vision, there was no attempt (that I can recall) by the predator to fight on even terms.

I always interpreted it as Billy's attempt at not ending up a trophy. Based on what they had seen with the other bodies, Billy probably assumed that the Predator was skinning his prey to use their hides as trophies.

If anything the guy thought it would be fun to beat the shit out of his prey instead of just shooting it. Alway liked how in that one deleted scene from the first movie, it shows the Pred messing around with Dutch, toying and scaring him for the hell of it.
I agree with the other fag up there, the Preds more likely hunt "by the book" and follow a set of rules, which isn't exactly the same as being honorable. That approach in my opinion is better, as it allows more indivuduality instead of the usual "all aliens behave exactly the same". While hunting a Pred may think humans are vermin barely worth their attention, while another may consider us a primitive but still worthy opponents.
