The US show is scripted forced drama, just as you say. In terms of being an insight into the businesses, it fails, in favour of human drama. I can't call it Objectively Bad, but it's not to my taste either.

But if it gets more views than the UK version, it is demonstrably a more 'sucessful' TV show. I'm pretty sure no one said sucess equals quality.

But the Italian American pizza is an evolution.

there are three 'acceptable' kinds of pizza to critics. The original Naples pizza, which is basically tomato & cheese bread, that later became flatbread with a light tomato sauce, mozzarella and basil, like a caprese sandwich.

The NY pizza is an incredibly thin, Jewish flatbread with piss poor Italian meat marinara sauce and mozzarella and cheddar cheese with too many greasy pepperoni slices on top. Also, and this is key, you must use gross as fuck NY tap water for the dough, for 'flavor'.

Chicago pizza isn't that much better. It's a pan pizza with really thick and yeasty dough, tastes like cardboard, and it's layered with sauce (generally just a thin tomato sauce, or sometimes fucking ketchup, cheddar, pepperoni, mushrooms, mozzarella, mushrooms, pepperoni, and a final layer of cheddar. Sometimes it has green peppers. Anyways, it's far superior to NY pizza (but what isn't?) but not as simple, light and tasty as Naples pizza.

Finally, you have the best of all worlds (even Canadian pizza, which is nothing to talk about except for the use of ham) which is Californian pizza (not cal-zones, which I would argue is a whole other thing)

What goes on a Californian pizza? ANYTHING!

Yet it must be a light and fluffy, not so yeasty or flat dough that doesn't taste like glue or cardboard (Chicago and NY) but is entirely of the Naples kind of dough.

The classic Californian is a Naples pizza without basil, a light tomato sauce (with no meat) a sprinkling of a blend of Muenster and Mozzarella and a few pepperoni, about ten per pie instead of the NY 30-50.

However, this is a transitional pizza to help the uninitiated into a whole world of possibilities. The next common pizza is the same light tomato sauce, motz and Muenster with Canadian bacon (ham) and pineapple.

But what is uniquely Californian is bbq sauce pizza with bacon and pineapple, or bbq sauce with chicken and granny smith apple, or Mediterranean pizza with feta, bell pepper, and olives.

Oh and there is some controversy over the order, do you put the toppings under the cheese or on top. I believe that they should always go on top of the cheese because when they are under the toppings tend to sweat, the condensation makes the pizza soggy.

NYC tap water is some of the best in the world by sourcing. They're ridiculously protective of their Catskills watersheds and bought up an enormous amount of land to prevent development within them.Their aqueducts are some of the largest engineering projects on Earth - and are amazingly almost entirely gravity fed, making it a very energy efficient system for its enormous scale. It's not like they just pull brackish water from the Hudson, douse it with chlorine and call it a day. Say what you want about NYC, but they care about their water supply.

Now, whether it gets to your kitchen sink in that quality, that's another matter. Buildings in New York, like those in many tall cities, make extensive use of rooftop water tanks, so that water only needs to be pumped up to the top level and then gravity fed back down to users. If the tanks or internal water pipes of a building are bad, well, sucks to be you.
