most simple hardware components are constructed with red wire being positive voltage and black being ground. if the wire is not red or black it should be some form of signal.
then of course if you make a bomb you probably don't want anyone to be able to defuse it. nothing prevents you from picking whatever color of wires you like.

the bomb could be triggered by one wiring delivering a logical 0 (ground), and it's expected to get a logical 1 (~5 V) constantly for as long as it's supposed to not blow. cutting the power or that peculiar wire should detonate the bomb. it could also be the other way around, then cutting the power should be ok.
i have education in hardware and system construction so i'm coming from that but i'm not familiar with how common bombs are produced.

i'm not familiar with detonators but surely you can test the behaviour of the state machine/micro controller/whatever you have to set off your bomb without having to use actual explosives.

if you cut a ground or a positive wire, components will malfunction. that doesn't mean the entire system goes down, just a subset of it's functionality.
if you cut a signal wire a potentially smaller subset of the functionality will go down.
it's extremely hard to just look at wiring and figure out what a system does. if it's just combinatorial circuits, it's possible, but if it's a microcontroller you can't, since you don't have the code running on the microcontroller. my best guess is that bomb technicians are successfull because the bombs people make are similar.
