They were debating about how they could possibly win the war as they were outnumbered in every way, but they never once discuss the fact that they have a fucking giant. Armour that fucker up, use him as a battering ram to shatter the enemy's formation and morale. They wrote themselves into a corner by making the giants that big and making them capable of complex tool use (i.e. bows), then compounded it by being too unimaginative to figure out a more intelligent way to realistically kill something that big such as siege weapons or a giant-sized punji pit.
So instead they just had him be unarmed, unarmoured and have him act like he's just another wildling warrior rather than the nearly unstoppable bipedal war elephant something that size and that intelligent would actually be.

Sometimes it feels like writers feel the need to tone down the more fantastic elements they've introduced, when in fact people would probably enjoy it if it was played up even more. Like in this case where they don't want the giant to be the main thing, so they tone it down and don't give him much to do. But if they had given him weapons and things and made him part of the main strategy I think people would love it.

That battle not in the books, but wildlings don't have much in the good weapons and armour. No marching phalanxes though. And people use common sense, the most obvious example is that Mountain was fighting Red Viper with a shield AND a two-handed sword, that was his whole point that he could use two-hander with a shield unlike lesser men, while in the show he just held it in one hand for no reason.
He's even good at swinging humans around like a club, as was demonstrated more recently. There are thousands of living flesh-clubs on the battlefield- never mind the horse corpses.
