This is really the only difference. The Sith seek power to profit off of it, while the Jedi do so in the name of "the greater good", sort of like how governments of the world say they're banning guns and installing cameras everywhere "for the public safety".

No, they got it right. No Sith means they can't abuse the dark side, which is a natural part of the force. Pain, suffering, death, these all happen, which creates the dark side. The Sith, through using the Clone Wars, and later the Empire, created so much of the dark side that it threw the force out of balance. With the Sith gone, the force levels out.
It was never 2 sith, 2 Jedi. The Jedi and Sith are not two sides of a coin. The Jedi's primary purpose was to maintain harmony and balance between the dark side and the living force.

As far as it goes in the comics or novels, it hasn't been covered. It's only speculated that he left for philosophical differences, but some things have hinted that it was a farce on Dooku's part as he might've already been in league with Sidious.

As far as we know, you're free to go. But once you're out, you're gone. No idea on whether the lost twenty is still canon. We really don't know of any Jedi to have left the order apart from Dooku and Anakin.

Force ghosts are a super rare phenomenon. General Jedi Doctrine is also that death is the end and you become an inseparable part of the force, but they accept the inevitability. Actually becoming a Force Ghost is based around one's selflessness and achieving some form of enlightenment and then letting go of your physical form. Maintaining that bit of Living Force that is you in the grander Cosmic Force for the purposes of lending a hand to the living and if the millennia old Priestesses are any indication, eventually fragment into some abstract emotional hivemind that's a mouthpiece of the Force's will.
