Yeah it actually gets pretty depressing when you get to the end of season 2 and all of season 3. I'd say only watch season 1 to get to know the characters and learn their relationships. It's something you can skim through. If you want it might even be worth it to start with season 2 to cut down on wasted time. You can probably guess the set up well enough from that point IIRC.

The show doesn't really shit on the idea of god so much as the hypocrisy of those who claim to be good Christians but in reality are horrible people who use their religion to convince themselves that they're good people. Season 3 really brings this shit home.

The show is really about dysfunctional families and people dealing with problems. Orel takes the bullshit that the townspeople say literally and finds out that they are in fact, bullshit.
It's not really anti-theist and is generally pretty kind to religion. It's supposed to ruffle your feathers a little.

Watch the Christmas epsiode. It's supposed to be the pilot, and shows you what the show eventually will be. The first season is basically a Christian cartoon parody. If you weren't raised Christian or watched Christian cartoons growing up go ahead and skip the first season.
Season 2 starts just like Season 1 but turns into a character study of the entire town. Go ahead and force yourself past the first few season 2 episodes because you need them to understand the characters when shit gets real later in the season.

Season 1 is basically a humorous take on stuff like Veggie Tales. It's very effective at this and establishes the meaningful but sardonic tone.
Season 2 observes how people abuse faith to feel better about flaws that they refuse to acknowledge properly, and establishes that much of Orel's faith is misplaced because of the disingenuous people around him.
Season 3 deconstructs how the character's faults ultimately bubble up and destroy the relationships that they so dishonestly held on to. Ultimately we see Orel escape his father's dishonesty and abuse and become a decent, christian man.
If you're reading the show as an 'edgy atheist cartoon' then you're deliberately looking for something to validate your incomprehensible ignorance of ethics and faith and should buzz off.
