My favorite AYOTD? episodes are probably Tale of the Night Shift, Tale of the Full Moon (which everyone ranks low because they are plebs and can't into the faux 50's John Waters style of the episode), and Tale of Station 109.1 with baby Ryan Gosling and Gilbert Gottfried.

Amazing Stories from the 80s is great. Spielberg produced it and it had a lot of great directors and big actors on it. It's family oriented, so lots of happy endings and some really cheesy eps."Miscalculation" gave me a giantess fetish. fun fact: the actress who plays the giantess is the one murdered by Phil Spector.
Eerie Indiana is also great. It's not an anthology, just a monster-of-the-week type show. It's fucking good. Steer clear of season 2. It was made for Fox Kids a decade later.

The killer telephone episode did it for me, most were pretty boring instead of scary or even entertaining. Does it actually get better on S2+?

Amazing Stories is one of the best produced anthologies you'll find. I highly recommend it.
BB stories are like 8 minutes long. with a short recap at the end where they "reveal" if the story is true or not. There are a few eps that scarred me for life when I was little.
