The moon has a lot more mass than the Enterprise, so thanks to relative position the vulcan sensors didn't notice the blip.
I think there's another reference to this tactic in TNG somewhere. For sure there's a reference to hiding over a pole to become obstructed by a magnetic field, and by the same token there's magnetic fields everywhere.
