What is so special about Ornstein and Smough? It's one of the more impressive fights in the game but I don't understand why they're so legendary

They're generally the hardest fight in the game for a first time player (Before anyone posts saying they were easy: I don't give a fuck) and I think the fact that they're a pair makes them immediately more memorable and interesting. They never speak but the dichotomy in their designs and actions allows the player to imagine their relationship.
Smough's design is also one of my favorites in the series and one of the most unique altogether. Ornstein has some backstory as the captain of the knights which makes him cool and interesting to people.
