It'd be like killing the pope during the medieval era, except just at a more localized level. It's more complicated than that. Westeros is divided on so many levels: religious, ethnic, cultural, political, and social. The case was different during revolution in the age of enlightenment, there was more reason to rebel because of the similarity in political structure across all of europe, as well as nationalistic reasons and religious reasons. It's not the case on Westeros. The conditions are wanting for continent wide rebellion. History doesn't back you up, it would if there were more parallels in GoT. Simply put, its more divided in Westeros and there aren't that many absolute monarchs to rebel against.

If anything I feel Westeros is less divided in many areas. Politically Westereos is ruled top down in all seven kingdoms. Having a different religion is not a big deal in Westeros, in Europe at the time people had to move, die or convert, since Protestantism was still a big deal. Cultural you basically only have the Dornish, the Andals and the first Men with a few customs that are different. In Europe you actually have 30 distinct languages and a ton of different countries with different cultures and that's not even counting the holy roman mess.
Anyhow I do agree that the lords are currently licking their wounds and don't care what happens to the Tyrells or Lannisters. I still think it's a mistake with winter coming. When the people are starving and they would be seeing sparrows distributing food in the Westerlands and Reach evenly among rich and poor, who's to say that they wouldn't rebel either.
Starvation promotes political unrest, see every big revolution ever and if I were a lord of the stormlands I'd help the stupid Lannisters and Tyrells before it would come to anything like that.
