It does, it's always just framed from a more low key perspective, which works very well with how the story is told.

A Song of Ice and Fire isn't as subversive as people tend to think, it's actually very much a traditional fantasy story, it just spends a great deal of time developing the characters before we get to the heroic conflicts that will define them.

The top-down view is not as impressive as looking up to the colossi. Also the outstretched arms of the Argonath make them seem much more foreboding and intimidating that the generic raised sword shown in GoT.

Care, love and attention to detail. If you watch the Appendices in the EE, the set designers and artists talk about how they were constantly thinking about every aspect of the design, including making it true to the book but also realistic and believable on screen. One of the best places you can see this sheer attention to detail is in this overhead shot, where if you look at the sides of the escarpment you can see the quarry where they sourced some of the stone for the construction. No such consideration was given by the computers that designed the Titan of Braavos. It's just a magical metallic monstrosity that was simply dumped into the landscape apparently at random. There's weathering on the statue, no birds nesting in its head, no slight tinges of green to show the growth of moss that the model artists decided to include.

Your right about plate though, because that not only takes a lot of metal but also can't be mass produced. Because it has to be tailored to you personally or you wouldn't be able to move well, nevermind fight. And you need a squire to help you put it on.

Nothing lower than a knight should be wearing full plate on average.

Anyway the Frey's aren't supposed to be terribly wealthy, so it makes sense that their common foot soldiers aren't decked out in plate mail.
