9/11 changed everything
I thought 3 onward were crap. 1 had the tightest plot and was far more coherent than any of the others. They had a small handful of movies that they parodied and kept consistent with them throughout the whole thing. I recently rewatched it and the majority of it still holds up.
2 I don't remember quite as well, but I do know it was still more consistent than the PG-13 sequels. It had a lot more "original" humor though, and brought in a greater number of parodies at the same time.
One thing I will say that I thought was really odd was bringing back the black chick that clearly died in the movie theater. It was funny that they mentioned it in 2, but it stands out as a really odd decision.

As far as spoofs go, Scary Movie was actually pretty good. Scream was still fresh in everyone's minds and the spoof genre was out of fashion and so the market wasn't saturated. Scary Movie brought the spoof back and actually had a decent writing team in the Wayans Brothers and co.
It'll never top spoof masterpieces like The Naked Gun and Airplane! but it's certainly half decent compared to the glut of spoofs that were to follow in it's wake.

Basically the entire 00's was constant spoof movies, studios just kept shitting them out after scary movie 3 came out only they got insanely lazier and stupid as they went on, kind of like capeshit now. Scary movie 1-3 were the only good ones, and that one with drake bell as the dragonfly or whatever was pretty funny, but it's also been a really long time since I seen that one.
I'm not counting any spoofs before scary movie. All those movies were flawless. The only failed spoof movie which idk how it could've happened with the actor and director team up, but Dracula dead and loving it is probably the weakest movie Leslie Nielsen and Mel brooks have done.

Some of the 1998-2001 references may not be recognizable to a modern audience under 25, but for a movie released in 2001 they were recent and mostly relevant.
Most of the older references were from instantly recognizable cult classics. The changeling and hell house are maybe two that the audience from that era would not get.
